Don't know about the duck crotch but the soups look good. It's foggy and freezing here in France and they look and sound so good but sadly so far away... mmm... maybe french onion something

That's rau can nuoc, literally "water celery". My mom mixes rau can nuoc with rau muong in canh bun giving it another flavor. I love it. It's great stir fry with beef, like rau muong, but take care not to cook it too much or it becomes fibrous.
