I've been a lurker in this blog for sometime now. My Dad works in Vietnam and I share with him the stuff that I read here. On his last vacation, he brought home some dried squid, just like what you pictured here. It can indeed get tough and requires a lot of jaw action when eating it :D

ive only ever found one restaurant that served me some muc nuong that wasnt chewy as hell. but of course you may know theres that special 1 day dried squid thats superb and not too chewy.

One of my favorite dried seafood. Maybe you can offer us a new recipe involving dried squids except for grilling it. I hope I can try this one even if I have an allergy on seafood.
