I am usually dissappointed in Vietnamese omelets since they are usually made more like a fritata than a true omelet with a neat little pocket of tantalizing surprises but that one looks so inviting I may want to try again.


Drifter - This is Laos omelette. Vietnamese omelettes are usually egg only affairs. This is more similar to Banh xeo (rice pancake)in V. cuisine.


OK that nails it. We were thinking of going to North Vietnam in December and possibly across Vientiane & Luang Prabang. Being a HUGE Banh Xeo fan and lover of omelettes, I think we need to go to Laos for this baby...now!

I wonder if I can find someone doing these in Springvale?
