Violets

I love this tofu. I first had it outside a temple in Dalat, then found it in the street in Qui Nhon. Then we found it in Hoi An and again in Thanh Ha, the pottery village outside Hoi An. I also had something very similar, but without the ginger, in the minority village at Ha Giang. I've spent a lot of time in Hue, but never found it there, but I'll be looking next time. There's a great recipe for it in Tracey Lister's Vietnamese streetfood book and I just made it again a few days ago.
